Make this Potato Soup with Broccoli and Bacon recipes for a great way to end a cold winter day! Two of my favorite foods are potatoes and cheese. Put them together on a chilly day into a soup. Add some broccoli, toss a little bacon on top, and comfort in a bowl! The best part of this recipe is the broccoli is cooked separately so my child who hates broccoli can still enjoy a hearty potato soup.
- 8-10 medium potatoes, cubed
- 1 medium onion, diced
- 1 pound broccoli, chopped
- 1 pound bacon
- 1/2 teaspoon salt
- 1/2 teaspoon dill, dried
- 1 teaspoon pepper
- 1 teaspoon garlic powder*
- 2 tablespoon parsley,dried
- 1 box 2% Velveeta cheese**
Put potatoes and onion in a stockpot and cover with water. Bring to a boil, then turn to medium heat and cook until potatoes are done. Meanwhile fry the bacon until crisp, set aside. Steam the broccoli to desired tenderness.
When potatoes and onions are done, do not drain the water. Stir in pepper, salt, dill, parsley, and garlic powder. Mash the potatoes with a hand masher or electric mixer until the soup is creamy and thick but not completely smooth. There should still be some small potato lumps. Stir in cheese.
Place broccoli in the bottom of a soup bowl (optional). Ladle potato soup on top and crumple a piece of bacon over it. Enjoy!
*Or use 4 minced cloves of garlic and cook with the potatoes and onions.
**2% Velveeta is made with 2% milk instead of whole milk for fewer calories. Another alternative is to drain the water off the potatoes and replace with skim milk before mashing. Then add shredded cheddar cheese to taste.
